Chiacchere, Frappe (OR CHIACCHIERE, CARNIVAL TRADITIONAL CAKES)

500 g di farina 00
30 g di zucchero vanigliato
3 cucchiai di zucchero semolato
1 bicchierino di rum o arancia
2 cucchiai di burro fuso
1 uovo intero
1 tuorlo d’uovo
1 dl di succo d’arancia
1l di olio per friggere
1 pizzico di sale
Mescolare tutti gli ingredienti e impastate bene per ottenere un impasto morbido.Avvolgere in pellicola e mettere in frigo a rassodare per almeno 30 minuti. Tagliate in 4 parti, e lavorare ogni pezzo singolarmente attraverso una macchina per la pasta l'impostazione più ampia, quindi piegare e mettere attraverso di nuovo, quindi reimpostare la macchina per la pasta a un ambiente più sottile, riducendo ulteriormente l'impostazione fino ad avere un lungo foglio di pasta sottile. Se non si dispone di una macchina per la pasta, usare un mattarello e stendere il più sottile possibile.
Utilizzando una rotella di taglio seghettato, tagliare la pasta in strisce. Scaldare una padella di olio (arachidi o girasole) fino a circa 170-180 ° C, e cuocere pochi pezzi di impasto alla volta. Girare con una spatola. Cuocere fino a doratura, poi scolare su carta assorbente. Spolverare con zucchero a velo.

Preparation:
Mix together all the ingredients and knead well to make a soft dough. Add a tablespoon of water if necessary. Wrap in clingfilm and put it in the fridge to firm up for at least 30 minutes. Cut into 4 pieces, and work each piece individually through a pasta machine on the widest setting, then folding and putting through again, then resetting the pasta machine to a thinner setting, further reducing the setting until you have a long sheet of thin dough. If you do not have a pasta machine, use a rolling pin and roll out as thin as possible.
Using a serrated cutting wheel, cut the dough into 1 inch by 5 inch strips. Heat a pan of oil (peanut or sunflower) until about 350°F (170-180° C), and drop in a few pieces of dough at a time. Turn with a spatula. Cook until golden, then drain on paper towels. Sprinkle with icing sugar.
